The aim of our work is the production of antifungal compounds against the pathogenic yeast Candida albicans from two strains of Streptomyces G24 and G68 using a date juice with lower market value. Both strains G24 and G68 had grown on this medium but at low dilution D4. The addition of a mineral nitrogen source NaNO3 at this dilution was necessary to have more growth abandonment. The production kinetics of anti-Candida activities on solid media: date juice, ISP2 and Bennett showed that the day of maximal production on both ISP2 and Bennett media is the 2nd day. However, in the middle date juice is the 6th day. Concerning the kinetics of production on the liquid medium the activities are maxima on the three media at the fourth day of incubation. The calculation of the averages of the zones of inhibition showed that the medium of the date juice is better compared than the two media ISP2 and Bennett that is liquid or solid. The antifungal molecules of the two strains are only appeared extractable by the n-butanol solvent. The HPLC profile of crude butanolic extract of strain G24 showed the presence of the 5 fractions.
